FINAL: Senior nutrition, dietetics and wellness major Mike Sooley of Lake Villa, IL, distributes water on stretches of microgreens growing at the Mighty Greens Farm in Elburn, IL, where he has been working since June 15, as part of a credited practicum class for NIU. The farm specializes in microgreens, providing 25 different types. He said he will continue working at the farm “until they kick me out.” Sooley wants to continue his education in the field of nutrition and organic farming and plans on a trip to Costa Rica in January to learn about the organic farming that is being maintained there. “If you can grow it, I want to learn about it,” Sooley said.
